An Introduction.

At Isla & Co. we bring our Australian culture and vibes to America through food, drink and shared experiences. People visit Australia for the natural beauty. The outback, the Great Barrier Reef, Sydney Harbor, Kangaroo Island, but by and large when they return home traveler’s rave about the people, the hospitality, and the welcoming experience that Australians are known for.

We look to imitate that feeling in our venues, guests come to Isla & Co. for the food and drink. They come back for always engaging, fun and personable experiences. Whether it’s a quality coffee alongside a friendly chat with our barista on a Sunday Morning or that “hits the spot” end of day cocktail paired with a few laughs with the bartender or, our personal favorite (and combination of the two), an espresso martini made without judgment (but a bit of jealousy) by the general manager at 11 am on a Monday morning - we believe that quality of service
doesn’t need to mean pretentious and stuffy.

Australia is one of the most ethnically diverse countries in the world with immigration ties dating back to the 1800’s from The Mediterranean, Italy, England and more recently SE Asia.
Fun Fact - Australia is about the same size as America, but 98% of us live with-in an hour of the ocean so seafood and long days at the beach are quintessential. Like Australia, our menu draws influences from a mixing pot of cultures boasting always-fresh, high quality ingredients and dishes as highlighted by our Signature dishes including the Kangaroo Skewers, Spicy Shrimp Vodka Rigatoni,
Fish & Chips, Pork Sausage Rolls, and Charred Octopus which is further emphasized through our brunch menu items like the Brekkie Roll, Smoked Salmon Benedict, Brioche French Toast, an Isla & Co. Burger and Grilled Chicken Sandwich with melted cheddar and a charred broccoli pesto.

If you’ve ever met an Aussie you know that we love to drink. We offer an extensive wine list with a growing focus on natural and organic wines, craft beers and signature cocktails like an Espresso Martini (an Aussie staple) made with vodka, Mr. Black coffee liqueur and fresh espresso, the Wizard of Aus made with Starward Whiskey, lemon juice, sugar, egg white and a Shiraz wine float and The Taipan comprised of Hiatus Tequila, spicy pepper, yuzu, agave and shiso alongside brunch cocktails like a mimosa and house blend Bloody Mary. The star of our beverage show is undoubtedly the Espresso Martini Flight which includes the Olive Temptation made with Starward Australian Whisky, house-roasted coffee, banana, cream, and olive oil, the Scarlett Rose with Tequila Reposado, Licor 43, house-roasted espresso, and a touch of salt, and the Coco Devine with Plantation Dark Rum, sherry, Mr Black, house-roasted coffee, and crushed Tim-Tams. These intriguing combinations from Beverage Director Jeremy Ortiz promise to captivate your taste buds and provide a truly memorable experience!

Melbourne, Australia is the self appointed Coffee capital of the world and they won’t hear another word about it. We take coffee seriously all over Australia so we do the same here at Isla & Co. so our guests don’t have to. They can just sit back and enjoy it to get their day going, get some me time or use it as a social tool to meet with friends and family. Our specialty coffee program inspired by Australian coffee culture serves Hole in the Wall espresso and features two signature house blends suitable for espresso and drip extraction originating from Ethiopia and the Americas and roasted in Denver, Colorado.
